Potato Soup
Peel 5 lbs of new potatoes (new is better) chunk it up and add
a large onion cut up. Cook until done If you put a quart of chicken broth
to cook it in it is better, or I put about 3 chicken bullion cubes. After
potatoes are soft take and mash with a potato masher not mixer, needs to be
chunky. After this I put about a teaspoon of salt and one of pepper a cup
of condensed milk then mix 4 tablespoons of flour with about that much butter,
after mixed add to the soup making sure there is plenty of potato broth before
you start.
That flour kinds of binds it together, and I like that, but still like it
soupy.
If you have already Irish potatoes that is ok!!
